Bombay Potatoes

Ingredients
For Your Bombay Potatoes
- 2¾ cups of potatoes, cubed
- 3 tbsp olive oil
- 2 tsps cumin seeds
- 2 tsps green chilli paste
- 1/4 tsp turmeric powder, optional
- 1½ tsps lemon juice
- Salt to your liking
- 2 TBSPs chopped cilantro

Heat your olive oil in a pan big enough to hold all of your ingredients.

Add your cumin seeds to your pan.

When the seeds begin to crackle, add in the potatoes.

Mix well and cover with a lid. Cook on a medium-high heat for 10 to 12 minutes or until the potatoes are cooked. Be sure to stir occasionally to keep from burning your potatoes.

Mix in the green chilli paste, turmeric powder, lemon juice, salt and cilantro.

Stir well and cook on a medium heat for a minute or two, stirring occasionally.

You’re done! Be sure to serve those potatoes while they’re hot!
